Smoked Watermelon Ham a la Duck’s Eatery and 2018 closeout
Hello all. Just a quick rundown of what’s happened this year with Mrdirtfarmer’s Ash.
- We repackaged the ash in a heavier plastic bag as per several customer suggestions.
- Offered an unfiltered ash option in 10lb and 20lb weights.
- Found out about all the different ways that ash is used by customers.
- Chicken dust bath, ceramic glaze, silver polish and gardening are but a few.
The most interesting use this year was several customers using mrdirtfarmer ash for making the Smoked Watermelon Ham a la Duck’s Eatery in New York City.
They are not going to release that recipe, but people are taking a shot at making this dish.
The 1lb hardwood ash is the perfect quantity for this recipe.
I’ve read that a ½ cup of ash in the brine for 1 watermelon is roughly on point.
A half-cup of ash will have an impact on the pH of 2-3 gallons of water. This causes the watermelon to toughen up a bit.
Definitely would not use more than a cup for just 1 watermelon.
To create the juicy 'ham', the eatery smokes the watermelon for eight hours, and then places it in a brine made of salt, hardwood ash, and spices for four days.
